Frosted mini Valentines cake

Ingredients

For the cake

  • 100g caster sugar (Lamb Brand)
  • 2 eggs
  • 1/4 tsp salt
  • 3 tsp lemon juice
  • Zest of 2 lemons
  • 180ml vegetable oil
  • 245g yogurt (Mevgal)
  • 260g self-raising flour (Lamb Brand)
  • Red food colouring

For the frosting

  • 100g margarine (Stork with butter)
  • 200g icing sugar (Lamb Brand)
  • 1 tsp vanilla essence
  • Pink food colouring
  • Red and pink dredges

Method

In a bowl, mix rind, oil, eggs and sugar with a fork. Add remaining ingredients and combine well. Divide the mixture into 3, adding food colouring to 2 parts to turn pink and red. Pour into 3 greased and lined cake tins and bake at 180C for 30 minutes. Leave to cool then turn out. Meanwhile prepare the frosting by mixing all the ingredients together in an electric mixer for 5 minutes until light and fluffy. Use the frosting to sandwich the 3 cakes together and ice the top and sides. Decorate with coloured dredges and serve.
