Fried halloumi cheese salad with caper herb and lime dressing

Ingredients
For the cheese
2 packets halloumi cheese, sliced and patted dry with kitchen paper
2 tbsp plain flour
Salt and pepper to season
Olive oil for frying
For the dressing
5 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
Juice and zest 1 lime
1 clove garlic, finely crushed
1 heaped tsp wholegrain mustard
Salt and pepper to taste
1 tbsp capers, chopped (Camel brand)
2 tbsp chopped fresh coriander and mint leaves
You will also need
8 black Kalamata olives (Camel brand)
1 large handful rocket leaves
Extra coriander and mint leaves for serving
Method
Start this recipe by making the dressing by simply mixing all the ingredients together and put aside. Next, season the flour with salt and pepper and use to coat the halloumi slices. Heat some oil in a pan and quickly fry the halloumi on both sides for 2 minutes till golden. Immediately place the rocket leaves into serving plates. Spoon over ½ dressing, lay over the fried halloumi and spoon over the remaining dressing. Place in the black olives and decorate with extra fresh coriander and mint leaves.
