Fresh seared tuna pasta salad with pesto, sun-dried tomatoes and walnuts

Serves:

Ingredients

  • 1 fresh tuna steaks, cubed
  • 2 tbsp olive oil
  • Fresh seasoning
  • 1 red onion, thinly sliced
  • 2 tbsp capers (Camel Brand)
  • 10 sundried tomatoes, sliced
  • 3 tbsp basil pesto
  • Juice of a lemon
  • 100g walnuts, roughly chopped
  • 150g fusilli pasta, cooked (Pasta Zara)
  • Handful fresh basil leaves, torn

Method

Start this recipe by heating 1 tablespoon of oil in a pan. Season the cubes of fresh tuna with fresh pepper and salt and quickly sear in the pan for a minute or two. Meanwhile, place all the remaining ingredients in a salad bowl and mix together well. Season with fresh pepper, toss in the seared tuna and serve immediately.
