Fresh pasta with spiced sausage, fennel, orange, cherry tomatoes and pistachios

Ingredients

  • 150g fresh pasta
  • 75g spiced sausage
  • 1 onion
  • 1 clove garlic
  • 1 fresh orange
  • 6 cherry tomatoes
  • 30g fresh fennel
  • 200ml vegetable stock
  • 25g pistachios
  • 20ml olive oil

Method

Sweat the onions, garlic and fennel in some olive oil. Add the sausage cut in small pieces and continue cooking for another 4 minutes on low heat, add the zest and juice of 1 orange and pour the vegetable stock to get a liquid consistency. Reduce the sauce until you have a less liquid consistency, add the cherry tomatoes and chopped pistachios. Boil the pasta for approximately 3 minutes if using fresh, add the pasta into the sauce, season, toss and serve. Drizzle some olive oil and some chopped pistachios.
