Figolli with figs and almond

Ingredients
Pastry
- 2 eggs (Le Naturelle)
- 280g flour (Lamb brand)
- 180g icing sugar (Lamb brand)
- 3 teaspoon baking powder
- 85g butter (Valio)
- 1 teaspoon vanilla extract
- Zest of an orange
- 2 spoons Cold milk
Filling
- 250g dried figs
- 50g blanched almonds
- 2 spoons apricot jam
- Juice of half an orange
- Decoration
- White chocolate (Lamb brand)
- Milk chocolate
- Royal icing mix (Lamb brand)
- Food colourings

Method
In a mixing bowl, whisk together the milk, eggs, orange zest and vanilla.
Whizz together in a food processor the flour, baking powder and icing sugar with a pinch of salt.
Next add in the butter and pulse till crumbly. Pour in the egg mixture and pulse till just combined.
Wrap the obtained pastry in cling film and allow chilling in a refrigerator for at least 20 minutes.
Prepare the filling, place the figs and almonds into the food processor and whizz till chopped. Add the jam and juice and whizz till combined.
Roll the pastry onto a lightly dusted surface and cut into your desired shapes., Place halve of the cookies onto a baking tray, divide with the fig filling, cover with the rest of the cookies.
Bake at 170°C for approx. 20 minutes. Allow cooling completely before decorating.
Prepare royal icing according to packet instructions.
Dip the baked figolli into the chocolates. Decorate with piped royal icing.
