Fig and cheese roll cigars

Ingredients
- 100ml water
- 1 orange
- 1 cinnamon stick
- 10 dried figs, cut in quarters
- 1 gibnaroll white (Ħanini)
- 4 sheets filo pastry
- 2 slices Parma ham
- 50g butter melted (Valio)
- 1 egg yolk (Le Naturelle)
- 2 tbsp. cream
- You will also need 1 tsp walnuts crushed, pea shoots, 6 blueberries and 1 tbsp. honey for serving
Method
Place the orange juice, water, cinnamon and figs, in a pan and simmer until water is absorbed and figs are very soft. If figs are not soft yet add a little more water and continue to cook. Cut the filo sheet in half, brush with melted butter and repeat the process 4 times. Lay the Parma ham in the middle of the pastry with the prepared fig jam and cheese roll on top. Roll up the pastry sheet like a parcel, brush with the egg wash made from the egg yolk and cream whisked together. Place onto a baking sheet and bake in the oven at 200°C for 20-25 minutes or until browned. Allow to cool down before portioning.
