Festive turkey burgers

Ingredients
For the burgers
- 500g turkey breast mince
- 1 tbsp. chopped fresh herbs (rosemary, thyme, parsley)
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 round Brie cheese
For the stuffing
- 25gb butter
- 1 large onion, chopped
- 50g cooked chestnuts, chopped
- 1 tsp dried Sage
- 1 x 200g packet dried breadcrumbs
- 200-300ml vegetable stock
- 4 slices chopped bacon

Method
For the burgers, place the turkey mince with the herbs, onion and garlic powder in a bowl and season with salt and pepper. Carefully mix in the chopped Brie cheese and form into 4 patties. Allow to chill in the fridge for 30 minutes before grilling to your liking. Meanwhile, prepare the stuffing by heating the butter in a pan and soften together the onion, age and chestnuts. Add the chopped bacon to the pan and fry for 3 minutes before adding in the breadcrumbs and enough hot stock to form a mixture that holds its shape firmly. Form into 4 patties and fry or bake in the oven drizzled with oil for 5-10 minutes. For the dressing, drain the pickled onions and chop. Place into a bowl with the mustard, honey and mayonnaise and mix well. Split the buns and toast lightly. Spread with the dressing followed by some salad leaves. Top with a turkey burger and spread with the cranberry sauce. Place the cooked stuffing on top and finish with the grated Cheddar cheese. Place under a hot grill to melt the cheese before serving.

Ħallih jiksaħ fil-friġġ għal 30 minuta qabel ma tixwihom skont kif tixtieq. Sadanittant, ipprepara l-mili billi ssaħħan il-butir ġo taġen u trattab flimkien il-basla, il-klin u l-qastan. Żid il-bejken imqatta’ u aqli għal 3 minuti qabel ma żżid fil-frak tal-ħobż u stokk jaħraq biżżejjed biex tifforma taħlita li żżomm il-forma tagħha sewwa. Ifforma f’4 patties u aqli jew aħmi fil-forn bi ftit żejt għal 5-10 minuti. Għad-dressing, ixxotta l-basal tal-pikles u qatta’. Poġġi ġo skutella bil-mustarda, l-għasel u l-mayonnaise u ħawwad sewwa. Aqsam il-brioche buns u ixwi ftit. Ifrex il-buns bid-dressing segwit minn xi weraq tal-insalata. Imla b’burger tad-dundjan u ferrex biz-zalza tal-cranberry. Poġġi l-mili msajjar fuq kollox u spiċċa bil-ġobon ċedar maħkuk. Poġġi taħt grilja taħraq biex iddewweb il-ġobon qabel ma sservi.
