Easter cupcakes with chocolate buttercream swirls

Ingredients
- For the chocolate cupcakes
- 2 eggs (Le Naturelle)
- 300g caster sugar (Lamb brand)
- 170g melted margarine (Stork)
- 180ml milk (Natrue)
- 350g self- flour (Lamb brand)
- ½ tsp bicarbonate of soda
- 50g cocoa powder (Lamb brand)
- 50ml hot water
You will also need
- Buttercream for piping
- 250g melted dark chocolate (Novi)
- Colored sprinkles and mini chocolate eggs to decorate

Method
To make the cupcakes, line a 12 hole baking tin with cupcake papers. Whisk together the eggs, sugar, melted margarine and milk. Next, add in the flour, bicarbonate of soda and cocoa powder and beat for 1 minute. Finally mix in the hot water and spoon into the cases. Bake for 12-14 minutes at 180°C. When completely cooled down, pipe on the buttercream and place into the freezer to set for 20 minutes. When ready, quickly dip into the melted dark chocolate and immediately decorate with coloured sprinkles and mini chocolate eggs.
