Curried couscous with prunes and walnuts
Serves:
Ingredients
- 100g couscous
- 20g onion
- 20g garlic
- 10g mild curry
- 100ml vegetable stock
- 10ml olive oil
- 4 prunes
- 10g walnuts
- 10g butter
Method
Mix raw couscous with the oil and stir. Place the couscous on a flat tray and cover for 2 minutes. Meanwhile cook the onions and garlic in butter when cooked add the curry and prunes stir well and finally pour the vegetable stock, once boiled pour the mixture on the couscous and cover with lid for 25 minutes ,add walnuts for garnish.
