Crunchy spicy chicken wings with honeyed blue cheese dip

Ingredients
- 1 kg chicken wings
- 2 packets croutons (Ainsley)
- 200g grated parmesan cheese
- ½ tsp garlic powder
- 1 fresh chilli finely chopped
- Zest of a lemon
- 1 tbsp smoked paprika (AJS Imports)
- 1 tsp dried oregano (AJS Imports)
- Chopped parsley
- Flour (St George’s Brand)
- 2 beaten eggs
- 1 wedge blue cheese
- 2 tbsp honey
- 2 tbsp fresh cream (Benna)
- 2 spoons mayonnaise
- Fresh seasoning
Method
Crush the croutons roughly with the aid of a rolling pin, mix together with the parmesan, garlic powder, chilli, zest, paprika, parsley and oregano. Cut the wings in halve from the joint, season with salt and pepper and roll in the flour. Dip in egg and roll in the crushed croutons mixture. Bake of deep fry as desired. To make the dip, melt the blue cheese with the honey and cream on low energy in a micro wave. Allow cooling completely before whisking in the mayonnaise.
