Crunchy cinnamon almonds

Ingredients

  • 1 egg white
  • 1 tsp vanilla
  • 500g whole almonds with skins on
  • 30g caster sugar
  • 70g light brown sugar
  • 1 tsp salt
  • 3 tsp ground cinnamon
  • ½ tsp ground mixed spice
  • You will also need extra icing sugar and cinnamon to decorate

Method

Start this recipe by lining a baking tray with a nonstick silicone mat and put aside. Place the egg white and vanilla in a bowl and whisk till fluffy but not stiff. Stir in the nuts and coat well. In another bowl mix together the sugars, salt and spices and pour over the almonds. Mix together well then spread the almonds over the prepared baking tray. Bake in the oven at 200`c for 15-20 minutes or until the nuts are crunchy. Immediately sprinkle over the extra cinnamon and icing sugar and toss around all over the warm nuts. Allow to cool down before serving.
