Crinkle berry and custard filo tart

Ingredients

For the custard
250ml fresh cream (Benna)
2 eggs
40g caster sugar
1 tsp vanilla extract

You will also need
400g filo pastry
80-100g melted butter (Benna)
250g mixed frozen berries
2 tbsp honey

Method

Start this recipe by greasing a 30cm round oven dish with butter. Take a sheet of filo length-ways, brush lightly with melted butter and gather up. Roll up into a circle and place into the dish. Repeat the process, adding the crinkled filo to the original circle until you fill the dish. Brush all over with the melted butter and bake in the oven at 180`c for 15 minutes. Meanwhile, make the custard by whisking all the ingredients together. When the filo comes out of the oven, carefully pour over the custard. Spoon over the frozen berries and drizzle over the honey. Pop back into the oven and bake for another 20-25 minutes until golden and crispy.
