Chunky chicken burgers with lemony couscous cakes and tomato chutney
Ingredients
For the burgers
- 2 chicken breasts, chopped
- 2 tbsp chopped black and green olives
- Chopped fresh herbs
- 1 egg white
- 2 tbsp breadcrumbs
- 100g smoked apple wood cheese
For the couscous cakes
- 1 packet lemon couscous (Sammy`s)
- 100g feta cheese
- 2 tbsp flour
- 1 egg
For the chutney
- 2 large tomatoes, crushed
- 1 tsp mustard seeds
- 1 tbsp vinegar
- 1 tbsp sugar
- 2 cloves garlic
- 1 small red onion
- You will also need salad leaves and crispy fried pancetta for serving
Method
For the chutney, peel and chop the onion and garlic and fry them in some olive oil together with the mustard seeds. Stir in the tomatoes with the remaining ingredients and cook until slightly thickened. For the burgers, combine all the ingredients in a bowl. Mould into burgers and bake, grill or fry according to your liking. To prepare the couscous cakes, cook according to the packet instructions. Mix in the remaining ingredients. Press into a pastry cutter to obtain the cakes and bake or fry until crispy. To serve, put the couscous cakes onto a serving
