Christmas turkey & gammon Pie

Ingredients

Pastry

  • 500g plain flour (Lamb brand)
  • 200g cold margarine (Stork)
  • 50g suet
  • ½ teaspoon dried sage
  • 150ml cold water

Pie filling

  • 500g cooked and sliced turkey breast 
  • 500g gammon, thick cut
  • 2 spoons butter (Valio)
  • 2 leeks, cleaned and sliced
  • 200g shredded cheddar cheese
  • 2 spoons flour (Lamb brand)
  • 200ml chicken stock
  • 200ml fresh cream
  • 3 spoons wholegrain mustard
  • Fresh thyme
  • 1 jar cranberry sauce
  • 1 beaten egg (Le Naturelle)
  • Sesame seeds

Method

Prepare the pastry, whizz together in a food processor the flour and sage. Add the fats and whizz into fine crumbs, bind with the cold water.

Line a greased 20cm deep springform tin with the pastry, brush with the cranberry sauce. Set aside

Sauce; Melt the butter in a double bottom sauce pan, stir in the leeks and herbs, cook until wilted. 

Add in the flour and mix into a roux. Gradually, pour in the stock, bring to the boil, add in the cream and simmer until sauce thickens. Stir in mustard, thyme, turkey, ham and cheddar. 

Turn the pie filling into the pastry case, cover with remaining pastry, Brush with a beaten egg and sprinkle with sesame seeds. Bake in a preheated oven at 200°C for approx. 45 minutes
