Christmas gingerbread star wreath

Ingredients

  • 250g margarine (Stork)
  • 200g brown sugar (Lamb brand)
  • 7 tbsp golden syrup
  • 600g plain flour (Lamb brand)
  • 2 tsp bicarbonate soda
  • 4 tsp ground ginger
  • 1 tsp mixed spice
  • 50g egg whites (Le Naturelle)
  • 500g icing sugar (Lamb brand)
  • 1 tsp lemon juice
  • You will also need sprinkles and decorations

Method

In a pan, melt together the margarine, sugar and golden syrup together. Add in the spices, flour and bicarbonate and mix together. If a little dry, add in a little extra water to bind. Roll out the dough between 2 sheets of baking paper, cut into 1 large ring 2 inches wide and various sized stars. Carefully place onto baking sheets. Bake in the oven at 180°C for 12-15 minutes, or until slightly more browned along the edges. While you allow them to cool down, make the royal icing by beating together the egg whites, icing sugar and lemon juice, then decorate the stars with piped royal icing and sprinkles. Allow to set dry, preferably 1 day before. Stick onto the wreath using royal icing and decorate with a large bow.
