Chocolate pancakes with sweet ricotta and almond cream

Ingredients

For the pancakes

  • 500ml milk
  • 200g flour
  • 60g cocoa powder
  • 2 tbsp melted butter
  • 2 eggs
  • 60g castor sugar
  • ½ tsp vanilla essence
  • Butter for cooking

For the filling

  • 400g ricotta
  • 2 tbsp icing sugar
  • Zest of a lemon and orange
  • 100g chopped chocolate
  • Mixed fresh berries

For the cream

  • 100g marzipan
  • 200ml cream
  • ½ tsp vanilla essence
  • Pinch of salt
  • 1 tbsp icing sugar
  • Icing sugar and berries for garnish

 

Method

Put all the pancake ingredients in a food processor and whizz into a smooth chocolate batter. Take a ladle spoon full of the batter and cook the pancakes in a non stick pan lightly greased with butter. To make the stewed fruits, put the sugar in a sauce pan with a few drops of water and caramelize. Next, add the fruit and mix with the caramel. Pour in the orange juice and zest and finish with the cream. Cook until slightly thickened. Remove from the heat and allow cooling down slightly before rolling in the pancakes. Meanwhile prepare the sauce. Simply put all the ingredients together and whizz with a hand blender into a smooth velvety sauce. Drizzle sauce over pancakes before serving.
