Chocolate macaroons with rum ganache`

Ingredients

  • 180g icing sugar
  • 140g ground almonds
  • 1 ½ tbsp cocoa powder
  • 3 egg whites
  • 80g dark chocolate, chopped
  • 80ml cream
  • 1 tbsp rum

Method

Start by making the chocolate ganache` by melting the cream and chocolate together in a saucepan over a low heat, stirring constantly. When the chocolate has melted, take the saucepan of the heat and mix in the rum. Pour the chocolate sauce into a bowl and leave to cool in the fridge for an hour or two. To make the chocolate macaroons, whip the egg whites to stiff peaks. Next, sift in the icing sugar and cocoa powder, and add in the ground almonds. Gently fold the dry ingredients into the stiff egg whites, keeping in as much air as possible. Place the mixture into a piping bag, and pipe small rounds onto baking trays lined with non-stick oven paper. Bake in the oven immediately at 180`c, for roughly 20 minutes. Remove the cooked macaroons from the oven, and leave to cool completely on the baking tray. Next, remove the chocolate ganache from the fridge and use it to sandwich the chocolate macaroons together.

  • 180g zokkor tal-ġelu (icing sugar)
  • 140g lewż mitħun
  • mgħarfa u nofs kokotina
  • l-abjad ta’ 3 bajdiet
  • 80g ċikkulata skura, imfarrka
  • 80ml krema; mgħarfa rum

Method

Agħmel il-ganachè taċ-ċikkulata billi tħawwad flimkien il-krema u ċ-ċikkulata f’kazzola fuq nar baxx. Meta ċ-ċikkulata ddub, neħħi l-kazzola minn fuq in-nar, itfa’ r-rum u kompli ħawwad. Itfa’ t-taħlita taċ-ċikkulata fi skutella u ħalliha tiksaħ fil-friġġ għal siegħa jew sagħtejn. Biex tagħmel il-macaroons, ħabbat l-abjad tal-bajd biex ittella’ l-ixkuma. Imbagħad, agħrbel iz-zokkor u l-kokotina u żid il-lewż mitħun u żidhom bil-mod fl-ixkuma b’tali mod li tħalli kemm jista’ jkun arja. Poġġi t-taħlita f’piping bag u agħmel forom tondi żgħar biha fuq tilar miksi b’karta forn. Itfagħhom dritt fil-forn f’temperatura ta’ 180oC għal madwar 20 minuta. Oħroġ il-macaroons u ħallihom jiksħu sew fl-istess tilar. Imbagħad oħroġ il-ganachè taċ-ċikkulata mill-friġġ. Poġġi ftit minnu bejn żewġ macaroons biex tifforma sandwich.
