Chocolate avocado fondants

Ingredients
- 120g melted dark chocolate (Novi)
- 60g melted butter plus extra for greasing (Valio)
- 1 small ripe avocado
- 1 tsp vanilla extract
- 3 whole eggs plus1 yolk (Le naturelle)
- 120g icing sugar (Lamb brand)
- 2 tbsp. flour (Lamb brand)
- Extra icing sugar and few berries for garnish

Method
Generously grease 4 dariole moulds with melted butter. Peel and chop the avocado and place in a food processor, whizz until smooth. Next add in the butter, chocolate and eggs and whizz further into a batter. Transfer into a mixing bowl and blend in the icing sugar and flour. Divide mixture between the four ramekins and bake at 200°C for approximately 11 minutes. Allow to sit for 1 minute before serving with the berries and a dusting of extra icing sugar.
