Chicken Waldorf salad

Serves: 2

Ingredients

  • 2 red apples, cored and diced
  • 2 sticks celery, thickly sliced
  • 10 red grapes, halved and deseeded
  • 2 spring onions, sliced diagonally
  • Juice of a lemon
  • 50g walnut halves
  • 1 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp wholegrain mustard
  • 1 clove garlic, finely chopped
  • 1 tbsp chopped parsley
  • Fresh seasoning
  • 1 large chicken breast, sliced in half horizontally
  • 1 tbsp olive oil
  • 2 cloves whole garlic, peeled
  • Few sprigs fresh rosemary
  • Few salad leaves to garnish
 

Method

To prepare the salad, place the prepared apples, celery, walnuts, grapes and spring onions into a medium sized bowl. Stir in the lemon juice to stop the apples from turning brown. In a small bowl, mix together the mayonnaise, Greek yogurt, mustard, garlic and parsley. Season well with salt and pepper and mix into the salad, coating all the ingredients well. Place in the fridge while you cook the chicken. Heat the oil in a small griddle pan and season the chicken pieces with salt and pepper. Place the chicken in the hot pan with the rosemary sprig and garlic and fry on both sides for about 4-5 minutes. When ready, remove off the heat, allow to sit for 2 minutes, then cut into slices. To serve, spoon the crunchy Waldorf salad onto 2 large plates and arrange the chicken slices on top. Finish of with a few salad leaves as a garnish.
