Chicken sundried tomato ciabatta with pesto mayo

Ingredients
For the chicken
1 large chicken breast, halved and hammered
1 heaped tbsp chopped sundried tomatoes (Camel brand)
1 heaped tbsp plain yogurt (Benna)
4 tbsp dried breadcrumbs (Lamb brand)
2 tsp dried oregano (Lamb brand)
1 tbsp chopped fresh parsley
Salt and pepper
Olive oil for frying (Borges)
You will also need
2 ciabatta
2 tbsp mayonnaise (Camel brand)
1 heaped tbsp. pesto (Camel brand)
1 beef tomato, sliced
Handful rocket leaves
2 tbsp Parmesan shavings
French fries or crisps for serving
Method
Start by mixing together the chopped sundried tomatoes and yogurt and use to coat the chicken. Next, mix together the breadcrumbs, oregano, parsley and season well with salt and pepper. Use to coat the 2 chicken pieces. Heat some olive oil in a large pan and fry the breaded chicken on both sides for 4-5 minutes. Meanwhile, make the dressing by mixing together the mayonnaise and pesto. When ready, split the ciabatta and toast in the pan juices and flavours from the chicken. To put together, spread the pesto mayo on both sides of the ciabatta. Lay on tomato slices, then the breaded chicken, followed by more mayo, rocket leaves, Parmesan shavings and then the ciabatta top. Cut in half and serve with French fries or crisps.
