Chicken kebabs

Ingredients
For the marinate
- 400g Greek yogurt (Kolios)
- 2 tbsp. olive oil
- juice 1 lemon
- 1 tsp smoked paprika
- 1 tsp sweet paprika
- 1 tsp salt
- 1 tsp garlic powder
- ½ tsp black pepper
- ¼ tsp chili flakes
- ¼ tsp ground cinnamon
- 1 tsp tomato paste
You will also need
- 700g chicken breast, cut into bite sized pieces
- 2 tbsp. olive oil
- Juice 1/2 lemon
- 2 red onions, sliced
- 1 handful cherry tomatoes, halved
- 1 cucumber, peeled and diced
- salt and pepper to season
- 200g Greek yogurt (Kolios)
- 1 packet pitta bread, warmed
Method
Place all the marinating ingredients together in a large bowl and mix together well. Add in the chicken pieces and coat all over in the mixture. Allow to marinate for at least 2 hours or overnight. When ready, thread onto wooden skewers and grill or BBQ brushed with a little oil for 4 minutes on each side. Meanwhile, make a salad by mixing together the onion, cucumber, tomatoes and lemon juice and season well with salt and pepper. Serve the chicken skewers with the salad on the side and with the extra yogurt and warmed pitta bread.

Method
Poġġi l-ingredjenti kollha tal-immarinar flimkien fi skutella kbira u ħawwad flimkien sew. Żid il-biċċiet tat-tiġieġ u iksihom kollha fit-taħlita. Ħallihom jimmarinaw għal mill-inqas sagħtejn jew matul il-lejl. Meta tkun lest, poġġi fuq skewers tal-injam, ferrex fuqhom ftit żejt u sajjar fuq il-grillja jew fuq BBQ għal 4 minuti fuq kull naħa. Sadanittant, agħmel l-insalata billi tħallat flimkien il-basla, il-ħjar, it-tadam u l-meraq tal-lumi u ħawwar sew bil-melħ u l-bżar. Servi l-iskewers tat-tiġieġ mal-insalata fil-ġenb u bil-jogurt żejjed u l-ħobż pitta msaħħan.
