Chicken Ceasar subs

Ingredients
- 2 small baguettes
- 1 tbsp butter
- 1 tbsp pesto (Camel Brand)
- 1 chicken breast, cooked and shredded
- 1 spring onion, sliced
- 2 tbsp garlic mayonnaise (Tesco)
- 1 tbsp grated parmesan
- Parmesan shavings and rocket leaves to garnish
Method
Cut the baguette in half, brush with butter and toast. Place onto a board and spread over the pesto. Mix together the shredded chicken, garlic mayo, spring onion and grated Parmesan. Spoon on the baguette and garnish with rocket leaves and parmesan shavings.
