Chicken burger with truffle mayo

Ingredients

For the chicken
1 large chicken breast, cut in half
1 tbsp chicken seasoning (Twistees rub)
1 egg beaten
4 tbsp panko breadcrumbs, seasoned with salt and pepper

You will also need
2 small Portobello mushrooms, grilled
3 heaped tbsp mayonnaise (Camel Brand)
1 tbsp truffle sauce (Salsa Tartufata)
2 brioche buns
Crispy fries for serving

Method

Start this recipe by preparing the chicken. Rub chicken seasoning all over with the chicken. Dip in the egg, followed by the seasoned panko crumbs. Heat a pan with oil and cook the chicken on both sides till golden and cooked through. To put together, mix the mayo and truffle sauce together and spread half on the bottom of the buns. Top with salad leaves, the cooked chicken fillet and the grilled Portobello mushroom on top. Top with the remaining truffle mayo, Parmesan shavings and place on the bun top. Serve with crispy salted fries on the side
