Caramelized onion cranberry and feta cheese bites

Ingredients

For the caramelized onions
2 red onions, finely sliced
1 knob salted butter (Benna)
1 tbsp olive oil (Borges)
Few thyme leaves
1 tbsp brown sugar (Lamb Brand)
1 tbsp balsamic vinegar

You will also need
3 large sheets filo pastry
75g melted salted butter (Benna)
3 tbsp cranberry jam or pesto
300g feta cheese blocks (Camel Brand)
2 tbsp sesame seeds
Runny honey for serving

Method

Start with the caramelized onions. Heat the butter and oil in a pan and saute the sliced onions and thyme leaves together for 5 minutes. Season well with salt and pepper, stir in the brown sugar and balsamic and cook down for 10-12 minutes. When ready, remove off the heat. Next, layer the 3 sheets of filo pastry together brushing in between each layer lightly with melted butter.  Spoon the caramelized onions over 1/3 length ways and spread the cranberry jam over the remaining 2/3. Cut the filo into finger lengths and lay side by side over the onions. Roll up tightly and cut into 1 inch pieces.  Brush a muffin tin lightly with melted butter and pop a piece of stuffed filo into each. Brush the tops with butter , sprinkle over the sesame seeds and bake in the oven at 200`c for 15-20 minutes. Drizzle the tops with the honey before serving.
