Chicken and Brie mille feuille with sweet potato

Serves: 2

Ingredients

  • 400g chicken breast
  • 200g tomato pulp (Star)
  • 1 tsp fresh rosemary
  • 1 red onion
  • 2 cloves garlic
  • 150g brie cheese (President)
  • 1 medium sized sweet potato
  • 1 tbsp grated cheese
  • 1 tsp paprika
 

Method

Slice the chicken breast in thin slices and grill from both side. In a pan sauté the onions, garlic rosemary until browned, add the tomato pulp and simmer. Slice the brie in thin sizes and using a round small oven mould layer the chicken and brie alternatively with tomato sauce in the middle, finish the top with grated cheese and paprika. Place under the grill until browned and allow a few minutes before removing the mould. Cut the sweet potato in wedges and fry twice to make it crunchier.
