carrot and sweet corn blini

Serves:

Ingredients

  • 1 carrot
  • 20g sweet corn
  • 1 egg
  • 100g flour
  • 50ml milk
  • 1 tsp baking powder
  • 20g butter
  • 1 onion
  • 1 potato

 

Method

Boil the potato for 10 minutes, drain away the water and crush .In a separate pan cook the diced onion with the butter to soften, then add the potatoes and the grated carrots. To make the blini, mix together the flour, egg, milk and the baking powder. Gradually pour the mixture in a frying pan in spoonfuls and cook for 1 minute on each side. Serve with the crushed potatoes and carrots.
