Burrata and truffle filo parcels with honey

Ingredients
2 large sheets filo pastry
2 tbsp melted butter (Benna)
1 portobello mushroom, sliced
1 sprig fresh thyme
2 tbsp salsa tartufata (Ar tartufi- Spa)
1 burrata
1 tsp dried chilli flakes (optional)
1 tbsp runny honey
Salad leaves to serve.
Method
Start this recipe by sautéing the Portobello mushroom in a pan with the thyme and a knob of butter. Next, lay out 2 sheets of filo. Brush 1 with butter and lay the other sheet on top. Spread over the 1 tbsp salsa tartufata, top with half of the sautéed mushrooms and half of the burrata. Sprinkle with chilli flakes if using. Roll up into a parcel, brush the top with a little more melted butter and place onto a baking tray. Repeat with the remaining ingredients to make 2 parcels. Bake in the oven at 200`c for 20 minutes or until lightly golden. Serve drizzled with honey and a petitie salad.
