Bulgar wheat salad with cranberries, strawberries and Edam cheese

Ingredients

For the salad

  • 200g Bulgar wheat (Lamb Brand)
  • 400ml veghetable stock
  • 1 large carrot, peeled and grated
  • 300g cooked chickpeas
  • 200g sweet corn
  • 50g dried cranberries
  • 10 fresh strawberries, sliced
  • 3 large pickled gherkins, chopped
  • 3 tbsp toasted pumpkin seeds
  • 100g Edam cheese, diced (Frico)

For the dressing

  • Juice and zest of an orange
  • 1 tsp Dijon mustard
  • 1 tbsp runny honey
  • 2 tbsp extra virgin olive oil (Filipo Berrio)
  • Salt and pepper

Method

Start this recipe by preparing the salad. Soak the Bulgar wheat in the hot stock for an hour until soft and tender. Add in all the remaining salad ingredients and mix well. Next, make the dressing by mixing all the ingredients together and season well with salt and pepper. Mix the dressing into the salad and serve in deep salad bowls.
