Bread and butter pudding with berries

Ingredients
- 4 eggs
- 2 tbsp sugar (Dia/More)
- 2 tsp vanilla essence
- 1 ½ tsp ground cinnamon
- 800ml milk (Dia/More)
- zest of a lemon
- 8 brioche/ Pan de leche (Dia/More)
- 2 tbsp butter (Flora Buttery)
- 150g frozen or fresh berries
- Icing sugar for dusting
Method
Preheat oven to 180`c and lightly grease a 22cm x 13cm oven dish. Whisk the eggs, sugar, vanilla essence, cinnamon, milk and lemon zest together in a bowl till light. Next, slice the small brioche rolls in half horizontally and lightly spread both sides with the Flora Buttery. Layer the buttered brioche in rows into the base of the prepared oven dish. Sprinkle over the fresh or frozen berries. Carefully pour over the egg mixture. Place dish in a large baking dish. Pour boiling water into baking dish until halfway up the side of smaller dish. Bake for 40 minutes or until golden and just set. Set aside to cool for 5 minutes before dusting with icing sugar. Serve whilst still warm.
