Braised rabbit with olives and anchovies

Ingredients

  • 1 whole rabbit
  • 3 tomatoes, chopped
  • 2 tbsp. tomato concentrate
  • 1 tbsp. mixed spice
  • 1 tbsp. cumin
  • 8 whole black olives (Camel brand)
  • 8 anchovy fillets
  • 1 red onion chopped
  • 6 cloves garlic chopped
  • 1 tbsp. thyme leaves
  • 1 glass red wine
  • 1 glass chicken stock
  • 2 large potatoes

Method

Cut the rabbit into pieces for stewing. Coat with the mixed spice and cumin. Heat a pan with oil and seal the rabbit pieces on high heat until browned. Add the olives, chopped anchovies, thyme, garlic and onions and continue to cook until the garlic becomes transparent. Pour in the red wine and reduce before adding in the tomatoes, concentrate, stock and simmer, until the rabbit is cooked. Allow to rest for a few minutes before serving. Cut the potato in wedges and deep fry to serve on the side.
