Beeramisu with coffee liqueur
Ingredients
- 1 packet Savoardi biscuits
- 1 cup espresso or strong black coffee
- 2 tots coffee liqueur
- 2 eggs, separated
- 3 tbsp caster sugar (Lamb Brand)
- 250g mascarpone cheese
- 1 bottle brown ale (Lacto)
- 250ml whipped cream (Benna)
- Dark and milk chocolate shavings
- Fresh berries to garnish
Method
Combine the coffee with the liqueur and the brown ale. Whisk the yolks with the sugar until pale and creamy. Fold in the mascarpone cheese. Next, fold in the whipped egg whites, whip the egg whites into a soft meringue and gently fold in the mascarpone cream. Soak the Savoardi biscuits in the beer liqueur and layer into a serving dish or glasses. Spoon the mascarpone cream over the biscuits. Repeat the process with the biscuits and the cream until mixture is all used up. Top with the chocolate shavings and decorate with the berries. Refrigerate well before serving.
