Beef and peanut Thai red curry

Serves: 2

Ingredients

  • 500 g beef skirt steak
  • 2 tbspThai red curry paste
  • 1 can coconut milk
  • Kaffir lime leaves
  • Fresh ginger
  • Baby corn
  • 1 red pepper finely sliced
  • Green beans
  • 1 tbsp brown sugar
  • 2 tbsp fish sauce
  • 2 tbsp smooth peanut butter
  • Salted peanuts
  • Fresh coriander leaves
  • Vegetable oil
  • Gluten-free cooked rice (Better Than)

Method

Cut the beef into thin strips. Heat up a spoon of oil over high heat and fry the beef stirring continuously for approximately 5 minutes. Remove meat from pan, stir in the curry paste and cook to toast. Pour in the coconut milk, lime leaves and the beef. Simmer for approximately 20 minutes. Add the sliced vegetables and season with the sugar, fish sauce and peanut butter, taste and adjust flavour with salt and pepper. Sprinkle with the coriander leaves and crushed peanuts and serve with the rice.
