BBQ rub chicken strips with crispy pancetta and ranch dip

Ingredients

For the Ranch dip
150g mayonnaise (Camel brand)
70g Greek yogurt
Squeeze lemon juice
Chopped fresh chives and dill
1 clove minced garlic
Salt and pepper

You will also need
2 chicken breast, cut into strips
1 tbsp BBQ rub mix (Twistees SPA)
1 tsp dried oregano
Salt and pepper to taste
100g thinly sliced pancetta
3-4 tbsp fine breadcrumbs (Lamb brand)
Drizzle olive oil (Borges)
Lime wedges for serving

Method

Start this recipe by placing the chicken strips into a large bowl and mix in the BBQ rub, oregano, salt and pepper to taste to coat all over. Next, carefully wrap each chicken strip tightly with the sliced pancetta. Roll into the fine breadcrumbs, place the strips onto a large baking sheet, drizzle with olive oil and cook in the oven for 15 minutes or until golden and crispy. Meanwhile, make the ranch dressing by mixing all the ingredients together and place into small serving bowls. To serve, place the crispy chicken strips onto serving plates with the ranch dressing on the side and lime wedges.
