BBQ pork fillet with grilled peaches and apple and chive potatoes

Ingredients

For the fillet
1 Pork fillet, trimmed of any extra fat
1 tbsp Chopped sage
2 Crushed garlic cloves
1 tbsp Olive oil (Borges)
Salt and pepper to season
You will also need
2 large Peaches, halved and stone removed
10 Small jersey potatoes, boiled
2 tbsp Apple sauce (Colmans)
1 heaped tsp Whole grain mustard (Colmans)
1 tbsp Mayonnaise (Hellmans)
1 tbsp Chopped fresh chives
Salt and pepper to taste

Method

Start by rubbing the pork fillet with olive oil salt, pepper, sage, garlic and crushed garlic. Allow to sit for 30 minutes. Meanwhile, place the apple sauce, mustard, mayonnaise and chopped chives into a bowl, season well with salt and pepper and mix together well. Cut the cooked potatoes in half and add to the dressing. Mix together and place into the fridge. Next, heat your BBQ and seal the whole pork fillet well on all sides for 2 minutes. Continue to cook on the BBQ till ready. Place the peach halves on the grill and cook till soft and sweet. Serve the pork fillet sliced with the grilled peaches and apple mustard potatoes on the side.
