Bbq chicken pinwheels with bacon ketchup and fries




For the ketchup

  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp oil (Borges)
  • 200g bacon
  • 1 tbsp brown sugar (Lamb brand)
  • 1 tsp smoked paprika
  • 1 tbsp balsamic vinegar
  • 2 tomatoes, deseeded and chopped
  • 2 grilled red bell peppers, deseeded and chopped

You will also need

  • 1 chicken breast
  • 1 packet BBQ flavored seasoned cooking papers (Maggi)
  • Fresh basil leaves
  • 2 cloves garlic, finely chopped
  • 1 ball smoked scamorza cheese
  • 2 tbsp chopped pistachios
  • 2 large potatoes, cut into fries and cooked
  • Wooden kebab skewers


Start preparing the bacon ketchup. Gently cook the onion and garlic over moderate heat in vegetable oil. Chop the bacon and add to the pan and continue cooking gently until the bacon is brown and crispy. Add in the brown sugar and caramelize, followed by the smoked paprika and balsamic vinegar, chopped tomatoes and peppers. Cover with water and simmer gently for 1 ½ hours adding more liquid if necessary.

Meanwhile, cut the chicken into thin long flat slices and place on a sheet of seasoned BBQ paper. Cover the chicken breast with roasted pepper fillets, basil, chopped garlic, grated scamorza cheese and chopped pistachios. Roll the chicken like a Swiss roll keeping the filling on the inside and secure the rolls with kebab sticks. Place the chicken covered with the seasoned paper onto an oven dish and cook in a hot oven until chicken is cooked through. Serve with the dipping ketchup and fries.
