Barbecued lamb patties with fattoush salad and lemon couscous
Ingredients
For the lamb patties
- 6 round lamb leg steaks
- 1 finely chopped shallot
- 2 cloves garlic, crushed
- Chopped fresh coriander, parsley and rosemary
- ½ tsp ground cumin
- 1 small piece root ginger, grated
- Lemon zest
- 1 egg
- 3 tbsp breadcrumbs
- Fresh seasoning
For the fattoush salad
- 1 romaine lettuce
- 1 small onion
- 4 tomatoes
- 1 cucumber
- Fresh mint, coriander and parsley leaves
- Olive oil
- Lemon juice
- 2 cloves garlic, finely chopped
- Handful kalamata olives (Camel Brand)
- 200g crumbled feta cheese
You will also need
- Packet of lemon flavored couscous (Sammy`s)
- 4 pieces pita bread
- Yogurt
- Lemon wedges
Method
Prepare the couscous according to packet cooking instructions. To make the patties, trim the lamb meat from the bone and discard of any fat and sinews. Finely chop the meat and put in a mixing bowl, together with the remaining ingredients for the patties. Mix all the ingredients together until well combined; mould into desired shapes. Grill the lamb patties on each side over your barbecue, brushing them with rosemary and olive oil. To prepare the salad, pick and wash the lettuce leaves. Wash and chop the tomatoes and the cucumber. Mix all the prepared ingredients together with the herbs leaves. Marinade with the olive oil, lemon juice, olive oil and garlic. Finish with the olives and feta cheese. Brush the pita bread with olive oil and grill. Serve the lamb patties accompanied with the salad, couscous, sliced pita, yogurt and lemon wedges.
