Baked Quinoa Casserole

Ingredients

  • 1 cup quinoa (Tipiak)
  • 2 cups vegetable stock (Knorr)
  • 2 cooked smoked sausages
  • 1 bell pepper, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 apple, cored and diced
  • 1 x 400g tin polpa
  • 1 x 150ml cooking cream (Hanini)
  • 200g shredded cheddar cheese
  • 2 tbsp. chopped parsley
  • 1 avocado, peeled and chopped
  • 1 tomato, deseeded and diced
  • 1 handful baby spinach leaves

Method

Cook the quinoa in the vegetable stock for 10-12 minutes. When ready, fluff with a fork. Sauté the chopped sausage in hot olive oil and allow to brown before stirring in the bell pepper, onion and garlic. Mix in the apples, tomatoes and cream, return to the heat and stir in half of the cheese and all of the cooked quinoa. Transfer the mixture into a baking dish, sprinkle with the remaining shredded cheese and bake until the cheese is melted and golden. Served with a side salad of tomatoes, spinach leaves and avocado.
