Baked pork fillet served with butter-fried Asparagus

Ingredients
- ½ pork fillet (cleaned from any fat)
- 6 asparagus stems (trimmed and cleaned)
- 100g butter
- Handful rucola leaves
- 4 cherry tomatoes, quartered
- 2 tbsp olive oil
- Fresh seasoning
Method
Start this recipe by heating a griddle pan with one tablespoon of olive oil and 50g butter. Meanwhile, season the pork fillet all over with salt and pepper and seal on all sides in the hot griddle pan. Transfer the sealed fillet to an oven tray and continue to cook in a preheated oven at 180`c for 15-20 minutes. Meanwhile, heat the remaining olive oil and butter and in another pan and gently fry the trimmed asparagus stems for 2 minutes. To serve the dish, plate with the asparagus on the bottom of a large serving plate and place the cooked pork fillet on top. Arrange the rucola leaves on top and drizzle with olive oil before serving.
