Baked cream cheese jalapeno peppers

Ingredients

  • 1 x 200g tub mascarpone cheese (Galbani)
  • 1 spring onion, finely chopped
  • 2 tbsp. chopped fresh coriander
  • ½ tsp garlic granules
  • Salt and pepper to taste
  • 50g grated mature Cheddar cheese (Emborg)
  • 1 packet Spicy tortilla chips
  • 15 green jalapeno peppers

Method

Place the cream cheese, spring onion, coriander, garlic, grated Cheddar into a bowl and season with salt and pepper. Take a few of the spicy tortilla chips and crush into small pieces and add to the mixture. To prepare the jalapenos, cut a slice off the top lengthways, about ⅓ of the pepper and discard. Remove any inner seeds and fill with the cheese mixture. Place onto a baking tray, drizzle lightly with olive oil and bake in the oven at 220°C for 11-13 minutes. Remove from the oven and top with more crushed tortilla chips before serving.
