Baci cake with chocolate ice-cream

Serves: 12

Ingredients

  • 350g caster sugar (Lamb brand)
  • 6 egg whites
  • 120g melted butter
  • 150g cream crackers, crushed
  • 100g ground hazelnuts
  • 50g chopped hazelnuts
  • 3 tbsp dark cocoa powder
  • 4 tbsp drinking chocolate
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • Chocolate ice-cream for serving (Carte D`or)

Method

Grease and line a 20cm spring-bottom cake tin and put aside. Whip the egg whites to stiff peaks, then gradually stir in the sugar to achieve a meringue. Sift in the cocoa, drinking chocolate and baking powder, then add in the hazelnuts and crushed crackers. Fold together gently. Finally fold in the vanilla essence and melted butter. Pour into the prepared tin and bake in the oven at 170`c for approximately 35 minutes. When cooked, allow to cool down completely before serving with chocolate ice-cream.
