Aubergine lasagna with cheese and tomatoes

Ingredients
- 1 aubergine
- 1 tomato
- 100g Cheddar cheese
- 100ml tomato polpa
- 1 onion, chopped
- 3 cloves garlic, chopped
- Salt and pepper
- 25ml olive oil
Method
Start this recipe by slicing the aubergine and tomatoes into rounds. Grill on both sides and put aside. Heat a pan and cook the onion and garlic in a little olive oil to soften. Add the polpa, salt and pepper and cook for 15 minutes. Next, layer the tomatoes and aubergine on top of each other in an oven proof dish, followed by the tomato sauceand the grated cheddar. Bake for 5 minutes at 180`c until the top has browned. Allow to rest for 5 minutes before serving.
