Apple and sage stuffed pork with walnuts and dried prunes

Ingredients

  • 1 pork fillet
  • 1 green apple
  • ½ onion
  • 1 tsp chopped fresh sage
  • 6 walnuts halves (Lamb Brand)
  • 4 pitted dried prune (Lamb Brand)
  • 2 cloves galic
  • 1 shot port
  • ½ glass stock (Star)
  • ½ courgette
  • ½ aubergine
  • Few spinach leaves
  • 1 large potato, grated
  • 2 cherry tomatoes

Method

Chop the onion and fry lightly add the diced apple,sage, diced prune and allow to soften. Add cruched walnuts mix and fill the middle of the fillet roll and tghithen with silver foil. Roast for aprox 35 minutes at 180`c or until cooked. In a saute pan fry lightly the roughly chopped garlic until browned than add the port allow to boil than stock and simmer. Grill the thin sliced courgettes and aubergines until nicely browned than add the spinach and remove from heat. Grate the potatoes toss in flour and deep fry to garnish with together with the cherry tomato.
