Apple and pecan cinnamon rolls with maple cream cheese frosting

  • 75g melted butter (Valio)
  • 4 tbsp soft brown sugar (Lamb brand)
  • 1 jar applesauce (Colmans)
  • 4 apples, peeled, cored, diced and cooked
  • 4 tsp ground cinnamon
  • 100g cream cheese (Emborg)
  • 100g icing sugar (Lamb brand)
  • 50g butter (Valio)
  • 2 tbsp maple syrup

Method

To make the dough, mix together the warm milk, yeast and 1 tsp sugar in a jug. Cover and leave for 5 minutes to froth. When ready, place the flour, butter, salt, remaining sugar, egg and yeast mixture into an electric mixer fitted with a dough hook and mix and knead for 10 minutes. Cover and allow it to rise double in size. When ready, knock out the air, turn onto a floured surface and roll out into a large rectangle. Mix together the 75g melted butter, 4 tbsp. brown sugar, cinnamon and apple sauce and spread evenly over the dough. Spoon over the cooked apples and roll up tightly. Cut into 12 pieces and place into a greased rectangular baking tray. Brush with a little extra melted butter and allow to rise again. Bake in the oven at 200°C for 25-30 minutes. Meanwhile, make the cream cheese frosting by beating together the 100g icing sugar, 50g butter till light then mix in the cream cheese and maple syrup. As soon as rolls come out of the oven, spread over the cream cheese frosting and serve.
