Almond and apple puff pastry braids

Ingredients

For the filling

  • 60g pure ground almonds (Lamb brand)
  • 60g icing sugar (Lamb brand)
  • 1 egg (Le Naturelle)
  • ½ tsp vanilla extract
  • 1 tsp finely grated lemon zest
  • 2 apples, peeled, cored and finely sliced
  • 1 jar applesauce (Colman’s)
  • 1 packet frozen ready-rolled puff pastry sheets, defrosted

Method

Make an almond paste by mixing together the ground almonds, icing sugar, egg white, vanilla and lemon zest and put aside. Unroll the puff pastry sheets, normally there are 2 sheets. Rollo out slightly thinner using a little flour and a rolling pin and cut each sheet into 2 pieces (obtaining 4 rectangles). Spread the almond paste down the middle of each, top with overlapping slices of apple and spoon over the applesauce. Cut the sides into strips and brush with the egg yolk. Braid the pastry strips tightly over the apples, cutting off any excess pastry. Place onto a baking tray lined with non-stick baking paper, brush with remaining egg and sprinkle over the almonds and caster sugar. Bake in the oven at 200°C for 20-25 minutes. Serve either hot or cold cut in half, dusted with icing sugar and served with a scoop of vanilla ice-cream.
