Whipped Greek yogurt with lemon honey and toasted oats

Ingredients

For the toasted oats
3 tbsp rolled oats (Lamb brand)
3 tbsp pecan nuts
1 tsp icing sugar

You will also need
290ml double cream
300ml full fat Greek yogurt
Finely grated zest 2 lemons
2 tbsp runny honey
1 box fresh blueberries or other berries

Method

Start this recipe by placing the oats, nuts and icing sugar together in a pan and toast gently for a minute or so to caramelize the sugar. Remove from the pan and into a bowl to cool down completely. Meanwhile, place the double cream, Greek yogurt, lemon zest and honey into a bowl and whip using an electric mixer. Spoon into glasses with the toasted oats and nuts and fresh berries on top.
