Baked filo stuffed with feta and fresh fig salad

Ingredients
For the filo
- 2 blocks feta cheese (Fior di vita)
- 4 large sheets filo pastry
- 3-4 tbsp. olive oil (Borges)
- 1 tbsp. sesame seeds
- 2 tbsp. runny honey
For the salad
- 1 handful rocket leaves
- 1 avocado, peeled and sliced
- 2 fresh figs, quartered
- 4 strawberries, sliced
- Few fresh mint leaves
- 2 tbsp toasted flaked almonds (Lamb brand)
- 3-4 tbsp yogurt dressing (Kuhne)

Method
Start with the baked filo. Lay out the filo sheets separately and brush lightly with a little oil. Fold in half and brush again. Cut the 2 blocks of cheese in half diagonally and roll up in the filo. Place onto a lined baking tray, brush with a little more oil and sprinkle over the sesame seeds. Bake in the oven for 15-20 minutes or until crispy and golden. When ready, Mix all the salad ingredients together and serve decoratively into 2 large deep pasta plates. Serve 2 filo parcels onto each plate and drizzle over the honey before serving.
