Almond and orange polenta cake with rosemary

Ingredients
For the cake
- 200g butter (Valio)
- 150g caster sugar (Lamb brand)
- 150g pure ground almonds (Lamb brand)
- 3 eggs (Le Naturelle)
- Zest 3 oranges
- Juice 1 orange
- 1 ½ tsp baking powder
- 140g polenta (Lamb brand)
- 1 tsp finely chopped fresh rosemary
You will also need
- 250g full fat Greek yogurt (Kolios)
- 1 tbsp. honey
- 50g pistachios, roughly chopped
- 1 tbsp. dried rose petals
- Extra orange zest and rosemary

Method
Beat together the butter and sugar till light then mix in the ground almonds and orange zest and juice. Beat the eggs together and mix into the cake batter. Finally, mix in the polenta, rosemary and baking powder. Line an 8inch cake tin with non-stick baking paper and spoon in the cake. Bake in the oven at 200°C for 40-50 minutes or until cooked through. When cooled down completely, mix together the yogurt and honey and spread on top. Decorate with the pistachios, rose petals and extra orange zest and rosemary.
