Herbed salmon with creamy feta and zucchini cream

Ingredients
For the salmon
- 2 salmon fillets, skin removed
- Drizzle olive oil (Borges)
- 1 packet herbed flavoured baking paper (Maggi)
You will also need
- 1 knob butter (Valio)
- 2 shallots, finely chopped
- 2 cloves garlic, finely chopped
- Good pinch chili flakes
- Fresh thyme sprigs
- 2 small zucchini, sliced into rounds
- 100g feta cheese, crumbled
- 150ml single cream (Elmlea)
- Juice and zest ½ lemon
- Salt and pepper to taste
- 2 large potatoes, scrubbed and diced

Method
Start by preparing the potatoes. Place into an oven dish and season with salt, pepper, thyme and a drive of olive oil. Place into the oven at 200°C and roast for 30-35 minutes. Meanwhile, heat a drop of oil in a pan and quickly seal the salmon fillets on both sides. Remove from the pan, wrap in the herb flavoured oven papers and continue to cook in the oven for 7-8 minutes to your liking. Next, melt the butter in the same pan and sauté together the shallots, garlic, chili and some thyme to soften. Add in the zucchini and cook for 4-5 minutes. Next, add in the crumbled feta and cream and cook down for 3-4 minutes. When ready, remove off the heat and stir in the lemon zest and juice. Serve with the herbed salmon and roasted diced potatoes.
