Crab and sweetcorn chowder

Ingredients
- 1 small onion, diced
- 1 small leek, shredded
- ½ carrot, diced
- 1 large potato, diced
- 120g sweet corn
- 100g crab meat
- 200ml double cream (Elmlea)
- Small bunch chives, chopped
- 1 litre fish stock (Knorr)

Method
Heat a pan with 1 tbsp. olive oil and sauté the onion, carrot and white part of the leek until softened. Add in the stock, bring to the boil and simmer for 10 minutes. Add the diced potato, green part of the chopped leek and simmer until potato is softened. Add in the cream, sweetcorn and crab meat and simmer for a few minutes, season well with salt and pepper and serve with the chopped chives.
