Stir-fried vegan noodles

Ingredients
- 150g egg fried noodles
- 150g meat-free chunks (Quorn)
- 6 baby corn, cut lengthwise
- 80g tinned pineapple cubes
- 1 tbsp. ginger mince (Tiger tiger)
- 1 tsp garlic mince (Tiger tiger)
- 2 tbsp. honey
- 2 limes
- Small bunch fresh coriander, chopped
- 1/2 red chili, chopped
- 4 medium sized mushrooms, cut in quarters
- 1 small leek, shredded
- 4 tbsp. sesame oil (Tiger tiger)

Method
In sesame oil sauté the ginger, garlic, leeks, chilly, baby corn and mushrooms until lightly browned. Add the honey, pineapple and caramelize. Add the meat-free and toss, then pour in the lime juice, hoi sin, soy sauce and bring to the boil. Add the blanched noodles, coriander season and toss well. Garnish with sesame seeds and lime zest.
